Starchy, nutty, faintly violet. The smell of a split taro corm is barely there — raw, it reads as wet earth and cold starch. Cooked, it becomes something else: roasted grain, toasted coconut, a whisper of basmati rice. No taro essential oil or absolute exists. In perfumery, “taro” is a reconstructed accord — a fantasy note built from lactones, maltol, and pyrroline derivatives to approximate the cooked corm’s warm, starchy sweetness.
Raw taro: almost nothing. Damp clay, cold starch, a whisper of green sap. Cooked taro: warm, nutty, gently sweet — closer to toasted coconut or steamed basmati rice than to any fruit. A faint violet-like earthiness sits underneath, contributed by ionone traces in the corm. The overall impression is starchy and lactonic, not sugary: think rice pudding before the sugar is added, or the inside of a freshly baked bread roll. Compared to sweet potato, taro is drier and less caramelised. Compared to chestnut, it is softer and more floral. The "purple" association from ube (purple yam, Dioscorea alata) is visual, not olfactory — the two plants smell quite different.

The Full Story
Taro (Colocasia esculenta, Araceae) is a starchy corm — not a fruit, not a root in the strict botanical sense — cultivated across tropical Asia, Oceania, and West Africa. Archaeobotanical evidence from the Kuk Swamp in Papua New Guinea places taro domestication at roughly 7,000 years before present [A], making it one of the world's oldest cultivated crops.

Raw taro has almost no aroma: damp earth, cold starch, a faint green-vegetal note. The scent that people associate with taro — nutty, roasted, faintly sweet, similar to coconut and basmati rice — is a cooking product, generated by Maillard reactions when the corm is steamed, boiled, or baked. The defining compound is 2-acetyl-1-pyrroline (CAS 85213-22-5) [B], the same Maillard pyrroline that gives basmati and jasmine rice their cooked-rice signature and that defines pandan leaf aroma.
In perfumery
Taro has no commercial perfumery extract. Any 'taro' note in a fragrance is a reconstructed Maillard-style accord built from 2-acetyl-1-pyrroline at trace levels, maltol, ethyl maltol, and a small fatty-vegetal fraction (E,E-2,4-decadienal, methyl jasmonate). It sits naturally with coconut, rice, milk and almond accords; the East Asian dessert tradition — taro bubble tea, taro mochi, taro paste — is the cultural reference perfumers occasionally evoke.
