Ethyl 2-methylbutyrate (CAS 7452-79-1) is a branched-chain ester with sharp, bright green-apple character. The branched methyl group creates sharper, more defined character than straight-chain ethyl butyrate (pineapple).

The difference between green-apple (branched ethyl 2-methylbutyrate) and pineapple (straight-chain ethyl butyrate) comes down to a single methyl branch. This tiny change completely redirects perception from tropical to temperate fruit.
