Fermented tea as a perfumery concept primarily references pu-erh (post-fermented Chinese tea) and similar aged teas. The scent is dark, earthy, mushroom-tinged, with the complexity that microbial fermentation brings to any substrate.

The aroma compounds include geosmin (earthy), various pyrazines (musty), methoxyphenols (smoky), and aged-wood notes. The 'fermented' character is unmistakable — damp, alive, decisive. Very different from the bright, tannic scent of fresh tea.
