Honeydew Melon

Honeydew melon, as reconstruction, opens sweet and juicy — melonal supplying the canonical melon aldehyde signature, cis-3-hexenol providing the cool green-leaf top, Helional adding aquatic transparency. The accord reads soft, watery, slightly floral, less aromatic than musk melon. On skin it sits in the top-to-heart and fades within the first hour.

Honeydew melon (Cucumis melo var. inodorus) is the pale-green-fleshed cultivar of melon, distinct from the orange-fleshed cantaloupe (var. cantalupensis). The aroma is mild, sweet, watery — less aromatic than musk melon, more delicate than cantaloupe.

Honeydew has no commercial fragrance extract. The note is reconstructed from melonal (2,6-dimethyl-5-heptenal, CAS 106-72-9) [A] — the defining melon aldehyde — together with cis-3-hexenol for green-leaf top, Helional for aquatic-melon transparency, and γ-undecalactone for soft fruity body. The accord sits in the watery-fruity register, often paired with cucumber, watermelon and peach notes.
