The Full Story
Star anise (Illicium verum) is an evergreen tree native to southern China and northeastern Vietnam. Despite sharing its dominant aroma molecule with anise (Pimpinella anisum) and fennel (Foeniculum vulgare), star anise is botanically unrelated to either — it belongs to the Schisandraceae family. The star-shaped fruit, typically with eight points, is the aromatic part.
The essential oil, steam-distilled from the dried fruits, is dominated by trans-anethole (72-90%), the molecule responsible for the characteristic sweet, licorice-like scent. Minor components include estragole (methyl chavicol, approximately 2%), limonene (approximately 2%), and cis-anethole (approximately 0.5%). Trans-anethole is a phenylpropanoid — structurally related to eugenol (clove) and myristicin (nutmeg) — and it gives star anise its particular warm, sweet, anise-like character.
The tree is also the primary natural source of shikimic acid — the starting material for oseltamivir (Tamiflu). Until 2012, when pharmaceutical production shifted to genetically modified E. coli fermentation, up to 90% of the world's annual star anise crop was purchased by a single pharmaceutical company for Tamiflu production.
