Celosia argentea is widely eaten as a leafy vegetable in West Africa and Southeast Asia — the leaves and young shoots are cooked like spinach. The plant is also used in traditional medicine across the tropics. The name derives from the Greek keleos (burning) — a reference to the flame-shaped flower heads.
