The Full Story

Poivrol is a synthetic spicy ingredient designed to provide black pepper character in a more controlled, wearable form. Natural black pepper oil (from Piper nigrum) is dominated by bet a-caryophyllene and various terpenes, with piperine providing the pungent bite. Poivrol captures the warm, spicy, woody qualities of pepper while moderating the raw pungency.

The molecule provides a clean, warm pepperiness that is easier to dose and control in formulation than natural pepper oil, which can be aggressive and dominating. This refinement is characteristic of synthetic spice ingredients — they offer the character of the natural with greater consistency and blending flexibility.
