The Full Story

Aldehyde C-16 (ethyl methylphenylglycidate, CAS 77-83-8) is an epoxide ester, not an aldehyde. Smells like strawberry preserve rather than fresh strawberry: sweet, waxy-fruity, jammy.

Can suggest other cooked fruits (red currant jam, raspberry jam) depending on context. At higher concentrations, the waxy quality dominates.

Functions as a heart modifier for fruity and gourmand compositions.
