Scent

The Full Story

Gamma-decalactone (CAS 706-14-9) is a ten-carbon gamma-lactone. Represents peach flesh (vs gamma-undecalactone for peach skin). Found in peach, apricot, strawberry, and dairy.

Creamy-oily quality: low concentrations = peach-cream, higher = distinctly oily and fatty.

Also important in osmanthus reconstructions, where it contributes the flower's peach quality.
