Toasted, floral, and gently smoky. Oolong tea smells like the space between green tea and black — partially oxidized leaves that carry both the brightness of fresh leaf and the warmth of roasted grain.
Floral-toasty, with a gentle smokiness and a biscuit-like warmth. Lighter and more floral than black tea, warmer and more oxidized than green tea. The best oolong notes capture that liminal quality — neither fully fresh nor fully roasted, but hovering between.
Compared to Earl Grey accords (which are bergamot-driven), oolong is softer and more introspective. Compared to matcha, it is warmer and less vegetal.

Floral-toasty brightness — linalool and light roast warmth
Oolong tea is a partially oxidized tea (between green and black) produced primarily in China's Fujian province and in Taiwan. The oxidation level ranges from 10% to 80%, creating an enormous spectrum of aromas — from light, floral oolongs (like Tieguanyin at low oxidation) to dark, roasted varieties (like Da Hong Pao at high oxidation).
The aromatic complexity of oolong comes from its processing: withering, bruising, partial oxidation, and roasting each contribute different volatile compounds. Lightly oxidized oolongs are rich in linalool and geraniol (floral), while heavily roasted oolongs develop pyrazines, furfural, and maltol (toasty, caramel-like).
In perfumery, the oolong note typically targets the middle of this spectrum — floral enough to be recognizable as tea, with enough roasted warmth to distinguish it from green tea or jasmine tea accords. The note is constructed rather than extracted, using combinations of linalool, cis-jasmone, maltol, and smoky-phenolic molecules.
Da Hong Pao, a famous oolong teas, comes from six original mother bushes growing on the cliffs of Wuyi Mountain in Fujian province. In 2005, 20 grams of tea from these bushes sold at auction for approximately $28,000.
Extraction & Chemistry
Extraction method: Oolong tea absolute exists as a specialty product from solvent extraction of roasted tea leaves, but it is not widely traded. The note in perfumery is typically reconstructed using linalool, linalool oxide, beta-damascenone, maltol, and smoky-phenolic accents. CO2 extraction of oolong has been explored in flavor chemistry.
