Peach is the defining lactonic fruit note in perfumery. Its character is defined by a family of gamma-lactones — cyclic esters with 5-membered rings — that produce the creamy, velvety, skin-like sweetness associated with ripe stone fruit. The three commercially critical peach lactones are gamma-decalactone (10 carbons, the most intensely peach-like), gamma-undecalactone (11 carbons, trade-named Aldehyde C-14 despite being a lactone, not an aldehyde), and gamma-dodecalactone (12 carbons, softer, more coconut-like).
Gamma-undecalactone (Aldehyde C-14, CAS 104-67-6) is the most historically significant. It was first synthesized in 1908 by the Russian chemists Jukov and Schestakow and entered perfumery history as part of the Persicol base — the key peach accord in some of the 20th century's most celebrated fragrances. Its olfactory strength is notable: it persists on smelling strips for over 340 hours and requires careful dosing (typically 0.05-0.5%) to avoid an overwhelming fatty-waxy character.
No natural peach extraction is used in perfumery. Peach absolute and peach kernel oil exist but lack the characteristic lactonic sweetness — the key aroma compounds are present at trace levels in the fruit and are more efficiently produced synthetically. Peach notes are always constructed from lactones, sometimes supplemented with fruity esters and aldehyde C-14.
The peach note occupies the heart of fruity-floral, gourmand, and skin-scent compositions. Its creamy, velvety quality makes it one of the closest fruit notes to an actual skin scent — lactones in general are components of human skin odor, which is why peach-skin and skin-musk accords feel so natural together.

Gamma-undecalactone (Aldehyde C-14) was first synthesized in 1908 but entered fragrance history through the Persicol base, a peach accord that appeared in several landmark early 20th-century perfumes. Its trade name 'Aldehyde C-14' is a misnomer — it is structurally a lactone (cyclic ester), not an aldehyde. The name stuck from early supplier catalogs and is still used by perfumers worldwide, a century-old error embedded in professional vocabulary.

Extraction method: No natural peach extraction is used in commercial perfumery. Peach aroma is reconstructed entirely from synthetic lactones: gamma-decalactone (CAS 706-14-9), gamma-undecalactone (CAS 104-67-6, trade name Aldehyde C-14), and gamma-dodecalactone (CAS 2305-05-7). These are produced industrially via cyclization of hydroxy acids. Peach kernel oil (cold-pressed from Prunus persica pits) is a carrier oil without significant aroma. Peach absolute exists as a specialty product but is not standard in the perfumer's palette.
